Steps in The Preparation of The WondaTaste Abunuabunu Soup

  • This is the Ghanaian’s original green light soup, authentically made from kontomire or cocoyam leaves.
  • Wash and season your choice of meat or fish with some onion, ginger, and garlic.
  • Add water and the Abunuabunu powder, stir and boil until tender.
  • In a separate pot, boil the tomatoes, onions, peppers, and turkey berries (if using) until soft.
  • Blend the boiled vegetables (and a little of the cooking water/broth) into a smooth purée.
  • Add the vegetable purée to the pot with the cooked meat/stock and the abunuabunu.
  • Bring to a boil, then reduce the heat to a simmer.
  • Add the smoked fish and any remaining seasoning. Simmer for another 10-15 minutes, allowing the flavors to meld together.
  • Taste and adjust salt and seasoning as needed.
  • Ready to be served: Abunuabunu is typically served hot with fufu, banku, or rice.
